Run, don’t walk, to your local farmer’s market and grab summer tomatoes while you still can! These gifts of the garden won’t be with us much longer, with all their imperfect outsides and deliciousness inside.
One way to savor summer tomatoes is to serve them in Bacon, Lettuce and Tomato sandwiches. Summer BLTs are one of the best things about Summer! Here’s a yummy way to level up your sandwich:
Grab your favorite bread (we like a simple, good quality white bread) and the best summer tomato you can get your hands on. Grab your mayo and some crispy, cold, fresh iceberg lettuce. I like leaving the lettuce in large leaf sections for maximum crunch with each bite. Cover a baking sheet in foil.
Time for the bacon… cut the entire pound of bacon in half. Now you’re going to take the bacon strips and weave them into squares – repeat until your baking sheet is full. Make a pseudo-square with the remaining 4 slices.
It will look like this:
Cover the bacon squares on your baking sheet with foil and place in a COLD oven. Set your oven to 400 degrees to bake for about 17-20 minutes. A little less if your oven runs a little hot, and adjust the time for how thick your bacon is… you know your own oven best. When the bacon is golden brown and crispy, it’s done! Remove the bacon squares and drain them on a plate with a paper towel. Assemble your BLT, and don’t be stingy with the mayo on your bread!

Clever method with the bacon! I will have to try. BTW – I have soooooo many tomatoes in my garden, so if anyone wants tomatoes, you are welcome to come and get them. Many of them are so big that one slice will cover the entire sandwich.
